How do you like your apples?

Crunchy or soft? Sweet or tart?

Here’s a smattering of favorites — most grown here, a few not — and how they plot on your standard, double-axis chart. Remember learning that in algebra?

As you scan the chart, remember that the placements are an opinion based on taste-testing. Scientists who study apples will have a whole different metric for measuring sugar content and the fineness of the grain (finer equals softer). And, of course, the assumption here is that each apple would be taste-tested at full ripeness, even though apples ripen at different times of the summer and fall. The longer an apple sits, the more crunch it loses and the more sweetness it gains.
